if you want money, get skinning and mining -- skinning/leatherworking is what i do, another way to go is mining/engineering .... you could also go mining/blacksmithing... but overall blacksmithing is really hard and probably a better thing to change to later instead of starting with it

Check out your AH and consider your goals. On Mal'Ganis raw materials sell for a whole lot (especially Copper Bars ;) ) and finished products don't sell for a lot. If you want cash, you might consider mining and leatherworking because they're cash cows. Drops will account for a load of your equipment, and the rest can be bought at the AH so you won't be missing out on any of the equipment you might get aside from a few bind on pickup recipes later on.
Engineering is an exception since lots of engineering stuff is usable only by engineers. Engineering lets you have lots of cool gadgets that no one really expects, and is a lot more powerful than I gave it credit for -- same with Warlocks, so Doc is a handful since he's both. Anyway, engineers make things for themselves so if you want to be like a one man MacGuyver, check out mining/engineering.
I have very limited experience with herbalism and alchemy. I've heard that on some servers they sell loads and on others they don't sell at all. If you want to use loads of potions I would say cool, and all of your group mates will like it, but I don't know if you can rely on it being a good income source.

Skinning/Leatherworking for shamans is okay at the start, but at 40 they get mail (not sure if someone mentioned this or not). Your leatherworking will be pretty useless (atleast for yourself).
Alchy/Herb for shaman2win!

i regret going leatherworking as a lvl 56 shaman because the dragonscales to make the good shaman gear (blue dragonscale breastplate and shoulders) requires you to be lvl 60 just to farm 55 elite dragons. Do what teleporter said go mining/skinning, that way you can buy finished products because you have tons of gold. :)
Tailoring for making bags is something i've thought about and seems easy to get the material.
