Engineering is the best profession for every class, assuming you know people in your guild/friend base that can make you something else if you want/need.
At this point I couldn't imagine EVER having a character that wasn't an engineer.

Herbalism/Alchemy is pretty useful on a rogue.

Rogues strength is pvp now with the honor system and if you are able to whore consumables then yeh..big advantage, i don't use anything, dont even use bandaids anymore because im cheap and would rather die lol.

imo leatherworking is kind of a waste, except for some really good epic recipes later on. skinning is good for money, unless you spend all the leather on leatherworking ^^

Just start out with mass money with skinning / mining then ditch skinning for engineering when you have plenty of cash.

skinning makes tons of money, especially later when u get to thick/rugged leather.
er at least, if u consider selling ur leather for 1g a stack a lot...

I am leather working 199/225 and skinning 238/300 atm. I dont know, i chose those because leather is what rogues where and there is alot of good things you can make with leather working. I have spent an unbelievable amount of gold on this lol. I can make stuff for level 34s right now and I am only level 32 >_< . I want to max it out but i can't save for a mount and do leather working at the same time lol. I'm an idiot i'm like this in real life i can't save money, i spend it when i get it >_<

Engineering/Herbalism or mining since a rogue can make locks and the pick them to improve his/her lockpicking skills and get paid for ppl who want chests and oter stuff opened.
you can grind lockpicking alot easier tho, for instance the ships at ratchet, the tower in northern barrens, pickpocket for chests, etc

When I played, I had 300 Skinning/Leatherworking..I was making LOTS of money on the AH...whenever I would grind I would skin and then just mass sell to the AH...I had a CONSTANT cashflow..I occasionaly made some Leatherworking items to help me out and some stuff for the guild...At one point I was up to over 2,000 gold - I really suggest Skinning + Leatherworking...Skinning as an individual skin can make you lots of gold and the Leatherworking items can help out newbs/mid-level characters in your guild..at least 300 Skinning/Leatherworking was something in Janruary..when the game was new -.-; Not sure about now since I doubt there are many "newbs" running around in WoW since everyone and their grandma can have 3 level 60's by now...

generally speaking, herbs n pots are useful to every class. So alch/herb is good fer rogues. Some useful pots they can use, as well as make some decent money outa it
